I’ve been really experimenting with overnight oats a lot lately. Since I’m going to be going away in a few days and unfortunately the warm weather will be going away soon, I’m trying to get in as much testing as I can.
There are already a ton of recipes for overnight oats on other blogs. I’ve noticed that the majority of them are just alterations in flavor rather than consistency.
They all have the same premise: chia seeds or an equal ratio of greek yogurt to milk.
I wanted to try something different. What if we took out chia seeds all together and decreased the amount of greek yogurt to just enough to add thickness?
Also, I wanted to find a way to create the same volume you get in cooked oatmeal, which I find is often lacking in overnight recipes.
After a lot of testing, this is what I came up with. I have to say, I couldn’t be happier with the results.
You are going to need
1. 1/2 cup old fashioned oats
2. 1/4 cup almond milk
3. 2 tbsp greek yogurt
4. cinnamon and nutmeg to taste
5. 1 banana
6. blueberries and mixed nuts to top
Start off by combining the first four ingredients.
Then, cut up your banana and microwave it for 45 seconds. It should be pretty mushy, but that’ll help to release a lot of the natural sugars in the banana.
Stir into the mixture and set in the fridge overnight or at least for a few hours.
When it’s ready, stir everything again. It might not seem like it’s going to come together at first, but trust me it does. If you don’t want it as thick, you can always add more milk.
Top with your nuts and blueberries
Stir together again and enjoy!
